Visitors to sports events need to eat and drink and many of them like to take home an event souvenir. Yet catering and merchandising also play an important role for organizers since they generate revenue for the overall financing of the event. At the same time, food and souvenirs result in considerable environmental pollution when it comes to their production, processing, transport and disposal.

Environmentally and socially sustainable catering and merchandising require early planning and preparation. If the organizer also provides the catering, this increases the organizational workload as compared to using an external caterer, but it enables easier control of what is being offered. If the catering is expected to meet sustainability criteria, this must be clearly specified in the order. The same is true for merchandising: Here, too, early planning is crucial since environmentally friendly products tend to have longer procurement lead times.
